Breakfast Just Became My Favorite Meal

"Delicious Mornings" provides sweet and savory sustenance

I love mornings! I know I am a bit of a freak of nature with my love for the 5 o'clock hour, but I can't help it. One of my favorite parts is sitting having my coffee (by myself). The other favorite part is breakfast. I am always looking for the next over-the-top delicious recipe to serve my hungry family. I've made variations of all the usual recipes - pancakes, waffles, hash browns, breakfast burritos - but was running out of ideas on how to "wow" the family. And actually, I was kind of tired of the typical. Then I found Delicious Mornings, a made from scratch, comfort foods breakfast cookbook by Dina Foglio Crowell. What made it even better for me is that she is a military spouse. This cookbook is filled with everything from coffee cakes and doughnuts to frittatas and casseroles. There's not a breakfast food she didn't cover -- including pizza!

This pizza could be served for any meal of the day and the best part is you can do a "time cheat" and buy a premade crust.

Red Velvet Pancakes with Maple Cream Cheese Frosting

Pancake ingredients:
  • 2 cups flour
  • 3 Tbsp. cocoa
  • ½ tsp. baking soda
  • 1 ½ tsp. baking powder
  • 2 cups buttermilk
  • ⅓ cup sugar
  • 1 Tbsp. white vinegar
  • 2 eggs
  • 2 Tbsp. red food coloring
  • 2 tsp. vanilla extract
  • 2 Tbsp. vegetable oil
Frosting ingredients:
  • 8 oz cream cheese
  • 2 Tbsp. maple syrup
  • 1 tsp. vanilla extract
  • 1 ½ cup powdered sugar
Directions
Preheat an electric nonstick griddle to medium/low heat. In a mixing bowl, whisk together flour, cocoa powder baking soda and baking powder, set aside. In a liquid measuring cup add buttermilk, sugar, vinegar, eggs, food coloring, vanilla and vegetable oil and whisk until fluffy and well combined. Slowly add wet ingredients to the bowl with dry ingredients and mix just until combined. Do not over mix batter. Butter griddle generously and pour about a 1/4 - 1/3 cup batter at a time onto hot griddle. Cook until bubbles begin to appear on the top surface of the pancakes then flip and cook opposite side until pancake is cooked through but before they turn golden brown. Check doneness by using a spatula and gently lifting the underside of the pancake. Drizzle a stack with frosting or lightly spread each pancake with the icing.
