Salads that Make You WANT to Eat a Salad!

A recipe round-up

By Kamlyn Jurgensen December 5, 2014
Cinnamon rolls. Decadent desserts. Cookie exchanges. Parties. These are just a few of the reasons it is so hard to eat right in the month of December. Plus, it's cold. It's hard for me to eat a salad when I am cold. So what's a girl to do? Scour the internet for some delectable taste temptations that will inspire healthy eating all month long, of course. Here are just a few of the great ones I found:

Iowa Girl Eats has some amazing salads on her site and her Chicken Power Bowls with Crispy Baked Garbanzo Beans is sure to please even the heartiest eaters in your family.

Served over a bed of spinach or lettuce these Black Bean Cakes with Corn Salsa and Avocado Sauce from Baked Bree will keep you full and satisfied until the dinner bell rings.

If it didn't say healthy in the title of this amazing salad, you wouldn't know that Kristy's, from The Wicked Noodle, Chopped Thai Salad with Coconut and Curry Dressing was good for you, because it is filled with such delicious flavor it is sinful.

Crunchy walnuts, juicy pears, crisp spinach and chewy cranberries make this Cooking Classy salad, a superfoods salad. The Pear, Pomegranate and Spinach Salad is perfect for everyday eating or to grace your holiday table.

Kaitlin at The Garden Grazer has perfected a Southwestern Chopped Salad with Creamy Cilantro-Lime Dressing that will make it easy to stick with your healthy eating. This gluten-free, vegan fare is not only great for lunch, but dinner, too.

Damn Delicious also has some makeovers of your favorite salad classics. This Asian-Style Cobb Salad is perfect for a light lunch to power you through your shopping excursions.

If you've got a salad (or a healthy soup) you love, please share it with us in the comments below. I'm always inspired to eat more greens when there's a great recipe to go with them.
